When the Griddle Pan is on the stovetop, use low to medium heat and a couple tablespoons of high smoke point fat to preserve the nonstick (when used as a griddle, the pan will naturally patina on the bottom). Wipe any spills from the outside of your Ovenware before they get baked in. Use silicone or wood utensils to protect the nonstick coating.
